It was nice to see a truly Houston-based product at the show in Houston, and if you’ve not tried La Vaquita’s products you’re in for a treat. A very authentic Mexican treat. La Vaquita (the little cow) began when the matriarch of the family, María Castro began making the traditional Mexican cheeses she had learned from her mother for her family. Today, almost 40 years later, La Vaquita is sold throughout Texas and many other states. I was particularly taken with their Crema Mexicana and Crema Mexicana Agria (from the Spanish verb agriar, meaning “to turn sour”), the “crema de la crema” of the traditional Mexican crema. As the names suggest, Crema Mexicana is a thick, rich, heavy fresh cream that is neither sour nor salty. It’s great for pouring over Mexican dishes like enchiladas or for pasta and even desserts. Crema Mexicana Agria is a cultured, spreadable sour cream that is similar to crème fraîche. Whatever style one
